Product Description

Food emulsifiers are ingredients that help to stabilize mixtures of two or more immiscible liquids, such as oil and water, by increasing the viscosity and reducing the surface tension of the mixture. Commonly used food emulsifiers are lecithin, mono and diglycerides, polysorbates, stearoyl lactylates, and polyglycerol esters. These ingredients are used to improve the texture and shelf life of many food products, including margarine, ice cream, chocolate, baked goods, salad dressings, and condiments.
